It took me a while but I finally made my first Vietnamese beef curry with noodles. The flavours are absolutely amazing in that there are so many spices and flavours including cumin, chillis and star aniseed. This is enough to blast any cold. In addition, the vegetables add lot of texture to the tender beef.
You can use any meat you want and if you are strapped for time you can use prepacked chopped veg.

Ingredients
- 2 Tbsp vegetable oil
-1 pack diced beef
-1 Onion
-1 Tsp Garlic paste
-1 Tsp Red Chilli Paste
-2 star aniseed
-1 Tsp crushed cardamom seeds
-1 cinnamon stick
-1pack of mange toute
-1 Carrot shaved or cut into batons
-1 Bell Pepper cut into batons
-Baby Sweetcorn
-Chestnut mushrooms
-1/2 Cumin
-2 Tbsp black bean sauce
-2 Tbsp Thai fish sauce
-1 Tsp sugar
-1Tsp Coriander
-1Tsp Mint
Serve with noodles.
Instructions
Heat the wok using medium heat and add the beef.
Add the garlic paste, chilli, aniseed, cardamom seed, cinnamon, mange toute , carrots, baby Sweetcorn and mushrooms.
Stir the vegetables for 8 minutes.
Add Thai fish sauce and bean sauce.
Sprinkle chopped coriander and mint.
Add the noodles and mix for 8 mins or until cooked.
