Tomato Bruschetta

This was a refreshing, cool bruschetta to have for breakfast. If you don't want a cooked breakfast, and want something that is salad like, then this is the breakfast for you.


What makes this tomato bruschetta great to eat is the Italian herbs such as Basil and Oregano and garlic seasoning. In addition to that, there are a variety of tomatoes such as sundries and salad tomatoes. These also give a variety of flavours ranging from sweet, salty and.


Again, sourdough bread is great to have toasted because it absorbs the tomato juices without getting soggy due to its rough texture when toasted. This is also a great brunch or snack to have.

Serves:1
Ingredients

-3 Salad tomatoes

-1 jar of sundried tomatoes

-2 Spring onion

-1 Tsp Olive Oil

-1 Tsp Garlic Paste

-1 Tsp Italian Herbs

-1 Tsp Chives

-1 Tsp Parsley

-Salt and pepper to taste

-1 Sourdough

 

Instructions

  1. Wash and prep the fresh tomatoes.

  2. Chop the tomatoes into small pieces.

  3. Chop the sundried tomatoes into pieces.

  4. Chop the spring onion into pieces.

  5. Add the garlic oil along with the herbs and seasoning.

  6. Stir the seasoning until it covers the tomatoes.

  7. Toast a sourdough bread.

  8. When roasted place the sourdough toast onto a plate.

  9. Add the seasoned tomatoes onto the bread.

  10. Garnish with two spinach leaves.
