Tomato and Basil Soup

 




 

A tomato soup is one of quickest soups you will ever make. It is also one of the most delicious soup too. All you need is two tins of chopped tomatoes as your base or a tomato passata to your saucepan.


Then you will need to add your garlic and herbs such as oregano, thyme, basil and parsley. Rosemary is also another great herb to have. The oregano and basil gives the soup an Italian flavour.


Tomato has a tendency to get very acidic as it cooks. If you find this is the case you can add sugar or honey to neutralise that citric flavour.

Adding spinach and fresh basil leaves adds a pop of colour to the red soup. In addition, the fresh basil add a strong fresh flavour to the soup as well as adds extra sweetness. It also acts like a spinach leaf as well so you have something to bite on.

Serves: 2
Ingredients

-1 tin chopped tomatoes

-1/2 pack of spinach

-1 pack basil leaves

-1 Spring Onion

-1 Garlic Paste

-1 Tsp Italian herbs

-1 Tsp Parsley

-100ml Double Cream

-Salt and pepper to taste


 

Instructions

  1. Wash the spinach leaves.

  2. Pour the chopped tomatoes into the saucepan.

  3. Liquidise the chopped tomatoes.

  4. Add the basil leaves and Italian herbs.

  5. Add water for preferred consistency.

  6. Add a stock cube.

  7. Add the spinach leaves.

  8. Stir the contents of the soup.

  9. Serve in a bowl.
