I made this delicious side dish with a chicken curry one evening at my sister’s house. Knowing that I was coming over, I bought my spices over just in case. The last thing I wanted was to be under prepare. The health benefits of lentils are that it counteract the effects of too much salt in food and lowers cholesterol. In addition, it contains iron and potassium. I added spinach to the shall for extra texture and flavour.

Ingredients
-300g red split lentils
-1 pot of water
-Badin Seasoning
-1 Tsp ground cumin
-1 Tsp ground coriander
-1 Tsp ground turmeric
-1 Tsp parsley
-1 pack of spinach
-1/4 tsp fenugreek leaves (optional)
-salt and pepper
-2 Tbsp sunflower/vegetable oil
-2 tsp garlic paste
-1/2 chilli powder
Instructions
Wash the lentils until the water runs clear.
Transfer the lentils to a medium sized saucepan.
Add water, cumin, ground coriander, turmeric and garlic paste.
Boil and then allow to simmer for 15 minutes.
Add spinach and cook until the spinach has wilted.
Add water if the mixture is too thick.
Add chilli powder and mix contents.
Serve in a bowl.
