I’ve been wanting to make a cherry tomato salad with different coloured tomatoes. This so I can show a little more variety in my salads. Mum bought coloured cherry tomatoes by chance. So here is my first mixed leaf salad.
To give it an extra garlicky flavour, I added some garlic granules and used garlic olive oil. The crunchy Sweetcorn goes well with the wild leaf pack which includes rocket lettuce and spinach leaves. Yummy. Then there is avocado. Double Yummy. This salad can be adapted to your tastebud which is a great thing.

Ingredients
-Mixed cherry tomatoes
-1/3 cucumber
-1 tin of Sweetcorn
-Wild leaf pack
-1 Avocado
-Black chopped pitted olives
-1 Red onion
-1 tsp garlic granules
-1 tsp tarragon
-1 tsp coriander
-1 tsp parsley
-Drizzle of garlic olive oil
-Salt and pepper to taste
Instructions
Wash the vegetables (cherry tomatoes, cucumber, lettuce).
Chop the onion.
Chop the mixed cherry tomatoes in halves.
Peel some of the skin of the cucumber.
Chop the cucumber into pieces.
Chop the avocado into chunks.
Add the spinach leaves.
Add the black pitted chopped olives.
Drain the tin of sweetcorn.
Add drizzle of olive oil, garlic granules and herbs.
