Sometimes, it is good to break from tradition. I decided to use lemon as a seasoning rather than the usual spicy
seasonings that I enjoy. I also added mushrooms with this too because I know that goes well with chicken and parsley. Jacket potato pretty much goes with anything and this meal is no exception. It is quick too.
This meal is good to do during the week when you work and you want something quick. One thing I have started doing recently is adding parsley when I butter my jacket potato so that it has extra flavour.

Cooking time: 1 hour and 10 mins
Serves: 4
Ingredients
-1 pack of chicken breasts
-2 Jacket potatoes
-1/2 Lemon
-1 Tsp chopped garlic
-1 Tsp parsley
-1 Tsp tarragon
-1/2 pack of spinach
-Salt and Pepper to taste.
Instructions
Wash the chicken breasts.
Place the chicken breasts in a bowl.
Season the chicken breast with lemon, garlic and parsley.
Wash the jacket potatoes.
Pierce the jacket potatoes with a fork.
Microwave the jacket potatoes on one side for 6 minutes.
When time is up microwave the jacket potatoes for another 7 minutes.
Place the jacket potatoes in the oven at 180 degrees.
Fry the chicken breast and allow to steam in the frying pan.
Chop the mushrooms into slices.
Cook the chopped mushrooms.
Add Creme Fraiche to the pan to create a sauce.
Serve on a plate.
Cut Jacket potato in half
Add butter to cut jacket potatoes
Garnish with parsley.
