I love a Italian Salad and this particular one is quick and easy to make. In addition to this, I am also a fan cheese especially mozzarella. Cheese creates a lovely, chewy texture that complements the salad in terms of flavour. The prep time for making this salad is minimum and what is great is that you can make this salad with pretty much any pasta dish. It is still quite a healthy salad.
If you are on a diet, you can withhold the cheese and the flavour is just as great.

Serves: 4 people
Ingredients
-1 pack of cherry tomatoes
-Green Olives pitted and chopped in half
-1 Avocado
-1 pack Spinach leaves
-Spring Onion
-1 pack Mozzarella Cheese pearls
-Drizzle of basil olive oil/garlic olive oil
-1 tsp Garlic Paste
-1 tsp oregano
-1 tsp basil
-salt and pepper to taste
Instructions
Wash the spinach leaves in a colander (drain the spinach leaves)
Wash the tomatoes and chop in halves.
Chop the spring onion into small pieces.
Cut the avocado in half and remove the seed.
Chop the avocado into chunks.
Chop the green olives in halves.
Add the spinach leaves.
Drain the liquid from the mozzarella pearls and add to the salad bowl.
Add olive oil, herbs and seasoning
-Drizzle of basil olive oil/garlic olive oil
-1 tsp Garlic Paste
-1 tsp oregano
-1 tsp basil
-salt and pepper to taste
Serve in small bowls.
