Fattoush salad originates from Morocco. This salad was an absolute joy to make. There are various vegetables that create so many flavours and textures. It is a very colourful salad as well.
In addition to this, I also had the pleasure of frying pitta bread in butter. Adding these golden fried pieces of delicious created a buttery flavour to a garlicky minty dressing. I don’t usually use mint in my salad. However, this herb adds an absolute freshness and sweetness that just builds up.

Serves:4-6
Ingredients
-3 beefeater tomatoes
-1 cucumber
-Romaine Lettuce
-Black Olives (optional)
-1/2 red onion
-1 Red Pepper
-4 flat breads/2 pitta breads
-2 Tbsp olive oil
-salt and pepper
-Garlic paste minced
-4 Tbsp lemon juice
-3 Tbsp olive oil
-2 Tbsp parsley
-2 Tbsp coriander
-2 Tbsp mint
Instructions
Wash and cut the tomatoes, pepper, cucumbers and onions.
Cut the flat/pitta bread into squares.
Fry the bread in oil until golden and toasted.
Make the dressing using garlic mince paste, lemon juice, olive oil, parsley, mint and coriander.
Pour the seasoning over the salad and add the croutons
Serve the salad in small bowls.
