This is one of my favourite breakfast. There are so many textures and flavours on one plate. First, you have the velvety, soft spinach. Next, you have the chewy yet slight, crispy Halloumi cheese. Then you have the soft egg.
What also gives this breakfast flavour are the herbs. You have parsley, marjoram, coriander and the Halloumi has a salty, minty flavour so that you don’t have to season it. A cracking breakfast.

Cooking time: 30 mins
Serves: 4 people
Ingredients
-1 block Halloumi Cheese
-2 eggs
-3 handfuls of spinach
-coriander
-Parsley
-Marjoram
-Garlic paste
-Salt and pepper to taste
Instructions
Wash the spinach.
Chop the Halloumi Cheese into slices.
Fry the Halloumi Cheese until golden brown on a low medium heat.
Place in the oven to keep warm at 70 degrees Celsius.
Fry the egg on a low medium heat and season with coriander, salt and pepper.
Fry spinach with garlic paste and marjoram on a low heat until wilted.
Serve on a hot plate.
