Curried Scrambled egg and toast

 




 

This is a simple and quick way to make scrambled eggs with some added spice. You still get to be creative with this simple breakfast. When adding the mild curry powder, you can taste the subtle flavours of cumin, ground coriander, curry leaves and ginger. You can also add more if you want a stronger flavour or add a spicier curry powder.


What you will also notice when adding the curry powder is that colour of the egg becomes more yellow (depending on how much you add). I can imagine with curry paste the colour of the egg would be more concentrated.


In terms of garnish as well the herbs parsley or coriander, you can garnish with curry powder and chilli powder with complement each other. If you have a low threshold for spice and love scrambled egg this is great as the seasoning is quite subtle. Enjoy this edition of scrambled eggs.

Cooking time: 20 mins
Serves:3-4
Ingredients

-4 Eggs (makes 2 scrambled eggs)

-1 Tbsp Olive oil

-1 Tsp garlic paste

-1 Tsp parsley

-1 Tsp curried powder

-Salt and Pepper to taste

-Garnished with parsley and chilli powder



 
Instructions

  1. Break the eggs into the bowl and add garlic paste. curry powder and parsley.

  2. Mix the seasoning into the eggs.

  3. Add the eggs to the frying pan and fold until scrambled.

  4. Toast a piece of bread.

  5. Serve the food on a plate.
