Cherry Tomatoes, Avocado and Goat’s Cheese Salad


 

 

Having made a goat‘s salad previously, I decided to adapt the salad further by adding my favourite fruit (it technically is because it has a seed). Yes added the smooth avocado. Adding this particular fruit just lifts the colour in appearance and gives the salad a softer texture.

It is a complete contrast to the crunchiness of the sweetcorn and lettuce leaves as well as the hard bite of the cheese. Finally, you have the sweetness of the cherry tomatoes. All in all a great salad.

Serves: 4 People
Ingredients

-1 pack of rocket salad leaves

-7 Cherry plum tomatoes

-1 pack pitted black olives (select a few)

-1 tin of Sweetcorn

-4 Romaine lettuce leaves

-1 Avocado

-1/2 pack of wild mix lettuce leaves

-1 pack of goat’s cheese

-1 tsp garlic paste

-1 tsp mint

-1 tsp coriander

-1 tsp parsley

-Drizzle of garlic olive oil

-Salt and pepper to taste

 
Instructions
  1. Wash the vegetables for the salad.

  2. Chop the avocado into chunks.

  3. Chop the olives into half width ways and place in the salad bowl.

  4. Chop the cherry plum tomatoes width ways and place in the salad bowl.

  5. Chop the romaine lettuce leaves into strips and place into the salad bowl.

  6. Use 1/2 pack of mix wild lettuce leaves.

  7. Chop the goat’s cheese into cubes.

  8. Drain water from the tin of the sweetcorn and pour into the salad bowl.

  9. Add the herbs and seasoning and mix all of the contents of the salad.

  10. Serve the salad in a bowl.
