Cajun Smothered Chicken Wings with Smashed Potatoes

 



 

This was an American inspired dish that I have been wanting to make for a while. It is a great comforting meal to have in the winter. It is a also a fun meal to make because of the smashed potatoes. I have been making Cajun chicken and pasta for a while. However, I have been wanting to make smashed potatoes for a good while.


The spicy Cajun sauce goes really well with the buttery smashed potatoes. You have to let them steam dry before smashing them with a spoon or glass (whatever you have to hand). The longer you leave them in the oven the crispier they get.


These potatoes have been trending for quite a while actually on the net. When made separately these can act like a snack and you can dip them in any sauce you like. What is great is that these potatoes also go well with any main m


In addition, you have the collard greens as you call them in the States. In the UK however, they are called Spring Greens and they come sliced in a packet. They taste quite delicious like the mild version of cabbage. The best way to cook them is to steam them.

Cooking time: 20 mins
Serves:3-4
Ingredients

-1 pack of chicken wings

-1 pack of spring green (collard greens)

-1 pack of baby potatoes

-2 Onions

-1 Green Chilli Pepper

-1 tin of chopped tomatoes

-1 Tsp Paprika

-1 Tsp Cajun Seasoning

-1 Tsp Chipotle Paste

-1 Tbsp Butter

-1 Tbsp Maple Syrup

-1 Tsp Parsley

-1 Tsp Coriander

-1 Tsp Chives

-1 Tsp Garlic Paste -1 Stock Cube

-1 Garlic Stock Cube

-Salt and pepper to taste


 
Instructions

  1. Wash and prep the chicken wings and the vegetables.

  2. Season the chicken in garlic Paste, parsley, maple syrup, chipotle paste, paprika and Cajun seasoning.

  3. Place the seasoned chicken wings onto a baking tray.

  4. Cover the baking tray with aluminium foil.

  5. Boil the potatoes for about an hour.

  6. When potatoes are boiled, drain them.

  7. Allow the potatoes to steam dry.

  8. When potatoes have steamed dried placed them on a baking tray with oil.

  9. Partially smash the potato using a masher (the potatoes still need to be intact).

  10. Allow the potatoes to steam dry again.

  11. Cover the top the potatoes in butter.

  12. Place the smashed potatoes in the oven at 200 degrees Celsius until golden brown.

  13. Add a small amount of water to a saucepan with garlic Paste, butter and stock on a medium heat.

  14. Add the spring greens to the pot.

  15. Create a sauce using chopped tomatoes, maple syrup, cream, pepper and Cajun seasoning

  16. Mix in with the chicken wings.

  17. Serve on a large plate and garnish with parsley.
