Vegetarian dishes are not only healthy but also very delicious. In addition, you can create all sorts of meals to suit your lifestyle by substituting meat.
Occasionally, I like to have vegetarian dishes because it increases my intake of vitamins and minerals. Contrary to popular belief, vegetables can fill you up just as much as meat. This vegetable curry has a lot of sweet and savoury flavours as well as spice.

Ingredients
-Butternut squash
-Baby sweetcorn
-Mange tout
-Spinach
-Grated carrots
-Mushrooms
-Spring Onion
-Chopped garlic
-Chopped ginger
-Basmati Rice
-Coconut milk
-1/2 Ground Cumin
-1/2 Ground Coriander
-1/2 Ground Turmeric
-1/2 Chilli Powder
Instructions
Peel the butternut squash and chop into medium sized pieces.
Wash rice and boil in a medium sized saucepan.
In the blender add 1/2 Ground Cumin, 1/2 Ground Coriander, 1/2 Ground Turmeric, 1/2 Chilli Powder, chopped garlic and ginger.
Blend contents until it becomes a smooth paste.
Add to a large saucepan with oil.
Add vegetables (spinach, mange tout, butternut squash and mushrooms).
Add coconut milk.
Allow to cook for 10 minutes and then serve.
