Scrambled egg was my youngest sister's snack to eat back in the day and she liked how I cooked it in butter. Fast forward many years later, when I cooked it for her daughter (my niece who always tastes my food before eating it).
It was this very meal that was pictured above. She absolutely loved it and will now eat scrambled egg as well as a runny egg. What's more? She love avocado. This was a great breakfast for her.
What I do know is that after you break two eggs and whisk them to break the yolk, you add garlic paste to make sure that garlicky flavour is embedded. In addition, you would add herbs of your preference. At this point, I feel that at coriander, parsley, tarragon and chives are the best herbs. I would like to try thyme.
In terms of the avocado, I seasoned it with parsley (it was the only herb I had to hand at my sister's house). Also, I added chopped spring onion, chilli and garlic paste and garlic olive oil to the avocado to soften it. In a minute or two it is ready to mash. This was quick breakfast to make it was just the prep(as it usually is). It is a very healthy breakfast to have.

Ingredients
Seasoning for the scrambled eggs
-2 eggs
-1 Tsp of garlic Paste
-1 Tsp of parsley
-A pinch of salt and pepper
Seasoning for smashed avocado
-3 Avocados
-1 Tsp Garlic Paste
-1 Tsp Chilli Paste
-1 Tsp Parsley
-1 Olive oil
-1 Spring Onion (chopped)
-Salt and Pepper to taste
Instructions
Cut the avocado in half and deseed.
Remove the flesh out of the skin.
Pour some garlic olive oil to soften the avocado.
Mash until the avocado is soft.
Add the chilli and garlic paste.
Add parsley.
Mash until soft.
Crack two eggs into a bowl.
Lightly whisk the eggs.
Add the garlic paste, parsley and salt and pepper.
Fry some butter in a frying pan
Add the egg mixture to the frying when the butter has melted.
After 20 seconds start folding the egg until it binds together and is cooked.
Serve on a plate alongside the smashed avocado.
Garnish with parsley.
