I have been experimenting with a range of breakfasts that I have tried in actual brunch restaurants or seen online. It’s good to try a whole range of healthy breakfasts. I am a huge fan of smoked salmon (cooked or uncooked) as well as avocado.
This breakfast dish was going to test my presentation skills to the limit. Thankfully, I succeeded as I best as I could and the avocado and salmon tower did not collapse. This is one of the most intricate breakfasts I have ever made so far. It tasted delicious.
The smoked salmon really complements the creamy rich avocado. Of course, there’s the runny egg. The breakfast dish is garnished with lettuce leaves. Rocket or Red romaine lettuce will do. This is definitely a a brilliant breakfast dish to try at the weekend.

Cooking time: 1 hour
Serves: 3 people
Ingredients
-1 pack of smoked salmon
-2 avocados
-1 egg (1 egg per person)
-1 handful of lettuce leaves
-1 spring onion
-1 tsp coriander
-1 Tsp olive oil
-1 lemon (1/2 for the salmon and 1/2 for the avocado
Instructions
Cut the avocado in half.
Place in food blender and add herbs and seasoning
Fry an egg to your preference.
Cut the salmon and season in lemon and salt and pepper
Serve egg on a plate.
Using a ring mold to help you stack the avocado and salmon alternatively on the plate.
Garnish with lettuce leaves and use olive oil dressing.
