For all of the asparagus lovers out there this one is for you. After making the asparagus and pesto dip, I wanted to try and make an asparagus soup and now was the perfect opportunity. It was surprisingly easy to make and was very quick just like other cream soups.
I like asparagus for its nutty flavour and the fact it has a bite to it. Adding potatoes and spinach to the soup compliments the flavour of the asparagus and adds different textures to the soup.

Serves:3-4
Ingredients
-2 packets of asparagus
-2 knobs of butter
-1 pack of spinach
-2 potatoes chopped
-1/2 tsp marjoram
-1/2 tsp parsley
-1 tsp garlic paste
-Whipping cream/Milk
-Vegetable stock
Instructions
Chop the asparagus from one packet.
Chop potatoes and boil in a saucepan.
Fry the asparagus in butter In a frying pan.
Blend the asparagus in a food process until creamy.
Add the blended contents into a medium sized saucepan.
Add vegetable stock and milk.
Add 1 pack of spinach And mix until wilted
Add the chopped potatoes.
Add the herbs To the soup.
Fry a second batch of asparagus.
Add the asparagus to the soup and mix.
Serve in a bowl
